If you were a lounge lizard drummer like me in the 60s and early 70s, the bandleader usually had a couple break tunes in their repertoire. These were instrumentals that you normally would not play as part of the set, there were exceptions and people danced to them. This may not have happened in hipper jazz groups. You could just tell the audience (if there was one) that you were taking a break.
May times the break song was my favorite tune, it was usually some sort of improvisation and chance to solo. I played and heard many bands play this tune, Chicken Shack. Not as well done as this Jimmy Smith rendition, but you get the idea.
If it was the last set, the bandleader could announce over the mic that this was last call. I worked with a legendary audience personality that had a list of one liners he would rap over the mic.
